Secalim aims at producing and disseminating scientific knowledge and methods in the field of microbiological safety of food to meet industrial challenges and societal demands for public health. Its research aims to characterise and control microbial risk (safety and spoilage) in meat and seafood products by providing a better understanding and quantification of foodborne bacteria during food processing. In addition, its expertise in microbiological risk assessment contributes to the search for expert and innovative solutions to ensure the microbiological safety of food.
